3 Buddha Bowl Ideas for Your Lunch

For those who are looking for a simple lunch that is going to be healthy as well as delicious, then Buddha bowls are the way to go! These are gaining popularity since they have been introduced, as they are easy to make and super healthy. Here are 3 ideas to help you have a lunch that looks as though a professional chef made these!

Soba Noodle Bowl

Love noodles? Then this is the bowl for you.

Ingredients:

  • 1 cup of cooked Soba Noodles
  • 1 large carrot, peeled into noodle shape
  • 1 medium crown of broccoli
  • 1 green onion, sliced
  • ½ an avocado (sliced)
  • sesame seeds for garnish

The sauce:

  • 2 tbsp of soy sauce
  • ½ tsp of sriracha sauce
  • ½ tsp of toasted sesame oil
  • ½ tsp of dijon mustard
  • ½ tsp of maple syrup
  • ½ tsp of tahini
  • 1 clove of garlic minced
  • 1/3 inch of ginger minced

Combine the sauce ingredients together and set aside. Cook the Soba Noodles, then set aside. In the same water, blanch the broccoli florets, then blanch the carrots. Add these into the bowl, and then put your sauce, avocado, sesame seeds and green onion.

Steak Fajita Bowl

Ingredients:

  • 1 tbsp of butter
  • 1 ½ cup of rice
  • 2 tsp of minced garlic
  • 2 ¾ cup of warm low sodium chicken broth
  • 1 pinch of salt
  • 3 tbsp of lime juice
  • ¼ cup of chopped cilantro
  • 1 cup of steak that has been prepared in slices for fajitas
  • Grilled corn, veggies, and other items can be thrown into this as you like

Bring the rice to a boil with the chicken broth, butter, garlic salt and lime juice. Cook for about 15 minutes. Then place into the bowl with your steak and optional toppings, then sprinkle with cilantro.

Turmeric Sweet Potato Bowl

Ingredients:

For the turmeric mashed sweet potatoes:

  • 2 large sweet potatoes, cut into chunks
  • Swish of olive oil
  • 1 to 2 tsp of turmeric
  • 2 cloves of garlic minced
  • 2 cups of vegetable broth

For the Lemon Herb Dressing:

  • ¼ cup of lemon juice
  • 1/3 cup of olive oil
  • 1 small clove of garlic
  • 2 tsp of agave
  • ¼ cup of parsley leaves
  • ¼ tsp of salt

For the rest of the bowl:

  • Spinach leaves
  • Brown rice
  • Poached or scrambled eggs

Directions:

Basically make a sweet potato mash with the turmeric. You will want to heat the sweet potatoes in the vegetable broth until this is all absorbed then whip these together. For the dressing, add all the ingredients and mix well...you may find it easier to do this in a food processor or blender. Then toss the greens and rice with the dressing, add the sweet potatoes, and eggs on top, then add a bit more dressing on the top.
