Low Fat Recipes: 3 Ideas for Your Dinner

Who else loves to use low fat recipes for their dinner? You are not alone with this idea. After all, when you are wanting to lose weight or maintain a certain level of health, then you are going to need to make sure that you are eating properly. Low fat dinner recipes are a great way to ensure that the entire family is eating healthy. So, for your next dinner, why not consider one of these three low fat dinner recipes.

Low-Carb Tin Foil Chicken Dinner

Ingredients Needed:

  • 4 boneless, skinless chicken breasts
  • 2 bell peppers
  • 2 small red onions
  • 2 medium zucchini
  • Parmesan cheese to sprinkle on when done

For the marinade:

  • 1 ½ cup of olive oil and vinegar dressing
  • 1 packet of dry Italian dressing mix
  • Salt and pepper to taste

Instructions:

First, trim the chicken up and cut them into pieces that is about one inch thick. Mix together the olive oil and vinegar dressing along with the Italian dry mix. Put the chicken into a Ziploc bag and add half the dressing mixture. Let the chicken marinate in this for a few hours. About 1 to 2 hours before cooking, cut up the veggies and place these into a Ziploc bag with the rest of the marinade and let them rest for one to two hours. When ready to cook, drain all the dressing from the chicken and the vegetables. Then preheat the oven to 400 degrees. Tear off 8 large pieces of foil and fill these with the chicken and vegetables mixture. Seal the foil together to create a packet, then cook for about 20 to 25 minutes. Sprinkle with parmesan when done and enjoy!

Loaded Zucchini

For those who are looking for a vegetable based dinner. Then the loaded zucchini is going to be a hit.

Ingredients:

  • 2 large zucchini
  • Salt to taste
  • Pepper to taste
  • 1/3 cup of shredded cheddar cheese
  • 2 scallions, sliced and divided
  • 2 slices of bacon that is cooked and chopped
  • 8 teaspoons of reduced fat sour cream

Preheat the oven to 400 degrees. Then cut the zucchini in half lengthwise. You may need to cut a thin slice off the bottom to allow this to sit flat. Scoop out the pulp of each, then place this onto the baking sheet and bake for 5 minutes. Meanwhile, finely chop the pulp and squeeze this dry. Put this pulp into a bowl, along with the cheese, 1 tablespoon of the scallions, and half the bacon. Put this mixture into the shells once five minutes is up. Then return to the oven and bake for 12 to 15 minutes. Put some sour cream on the top once done and sprinkle with the remaining scallions and bacon.

Thyme and Garlic Chicken

This chicken is relatively easy. All you need is:

  • 6 cloves garlic
  • 1 ½ teaspoon of dried thyme
  • 4 pounds of chicken breasts, skinned
  • ¼ cup of orange juice
  • 1 tbsp of balsamic vinegar

Sprinkle the garlic and thyme onto the chicken then place into a slow cooker. You will want to pour the orange juice and vinegar over the chicken. Cook this on the low setting for 5 to 6 hours, then on high for 2 to 3 hours. Remove from the cooker and it is ready to eat!
