2 cups chopped tomatoes
1 red or green bell pepper, chopped
1 medium red onion, diced
1 cup diced English cucumber
1 1⁄2 cups low-sodium V8 or other tomato juice
Juice of 1 lemon
2 Tbsp olive oil, plus more for serving
1 Tbsp white or red wine vinegar
2 cloves garlic, chopped
1 tsp salt
To make Gazpacho you’ll need to first combine the tomatoes, bell pepper, onion, and cucumber. Refrigerate ¼ of the bowl and mix the remainder with tomato juice, lemon juice, garlic, salt, vinegar, and olive oil. That’s the hardest part. The rest is pretty simple.
